Ta da! Birthday cake!

I love celebrating birthdays. What better excuse to gather family and friends (and in this case, co-workers) and have some cake. However, I have made the sad realization over the past few years that the older people get, the less inclined they are to want to celebrate their birthdays, myself included. But in my opinion, no matter how much a person outwardly proclaims they don't want any birthday hoopla, inside everyone wants at least a cake. Therefore, I present to you...Devil's Food White-Out Cake from Dorie Greenspan. Ta da!
Three layers of rich devil's food cake, studded with some unintentional chocolate chips, sandwiched between layers of marshmallow frosting. There was no waiting until after lunch for this cake.
I do love marshmallow so its easy for me to say that I think the frosting was really the star in this cake. That and all my co-workers said the same. So I'm slightly disappointed that the frosting layers didn't stay as thick as I had thought. The lesson learned is to always use more frosting than I think is necessary, because there is never such a thing as too much frosting.
I don't have 8 inch cake pans like the recipe calls for so I used 9 inch pans instead. They made layers that weren't as thick and I didn't trust my amateur cake splitting skills. So my neurotic side came out and I decided to make another batch of the recipe so I could have the full three layers plus one to crumble that the recipe calls for. And actually, now that I think about it, that may be why my frosting layers kinds of smooshed down. I was using full thickness layers instead of split layers. Ah, hindsight, you are a curse and a blessing.

My boyfriend is always pestering me to make this cake. It does look soooo good, but also like a lot of work. Maybe for his birthday in February.
